Simple Greek Salad
Ingredients: (1 serving)
• 2-3 cups chopped butter or romaine lettuce
• 1/2 tomato, chopped
• 1/2 cucumber, sliced
• 2 tablespoon chopped red onion
• 1/4 cup Kalamata olives (optional)
• 1/4 cup peppadew peppers (optional)
• 2 tablespoon Greek dressing (See Recipe)
• Protein of choice (suggested: chicken)
Directions: Combine all ingredients and toss in a bowl. Top with your protein of choice, and enjoy!
